Chili Bean Soup

This is a hearty soup that serves as a meal all on its own!

Prep Time: 10 minutes    Cooking Time: 25 minutes     Serves: 4


What you'll need:

2 Tbsp. light olive oil

2 onions, peeled and chopped

2 green bell peppers, seeded and chopped

1 (15.5oz) can small white beans, or 1 cup dried small white beans, presoaked and cooked

1 cup tomato puree

1 cup vegetable broth or water

2 tsp. Super Mirchi Hot Sauce

½ tsp. curry powder

½ tsp. salt or to taste

Garnish: 2 Tbsp. freshly grated Parmesan cheese


1. In a 3-quart nonstick saucepan, heat the oil. Add the onions and bell peppers. Sauté for 5 minutes, until tender. Add the beans, tomato puree and broth. Simmer over medium-low heat for 15 minutes.

2. In a food processor fitted with a steel blade, or a blender, process the mixture to a coarse puree. Return the contents to the saucepan. Add the hot sauce, curry powder, and salt. Bring the soup just up to a boil, lower the heat, and simmer for 5 minutes.

3. Sprinkle with grated Parmesan cheese. Serve hot or cold.
